Description

Recreate the iconic, thick, and doughy Crumbl-style cookies at home using this scientifically-backed recipe. By utilizing a high-heat baking technique and precise ingredient ratios, you’ll achieve that signature soft center and golden edge every time.

Ingredients

  • 333g (1.5 cups) salted butter, softened to 65°F
  • 173g (0.75 cup) granulated sugar
  • 369g (1.5 cups) brown sugar
  • 2 large eggs, room temperature
  • 1.5 tablespoons vanilla extract
  • 684g (4.5 cups) all-purpose flour (11.7% protein)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 400g (2 cups) milk chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a stand mixer fitted with a flex edge beater, cream the softened salted butter with the granulated and brown sugars on medium-high speed for exactly 4 minutes until pale ivory in color.
  3. Add the room temperature eggs and vanilla extract, mixing on medium speed until the mixture is light and fully emulsified.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Turn the mixer to the lowest setting and gradually add the dry ingredients, stopping the moment no white streaks remain.
  6. Fold in the milk chocolate chips by hand.
  7. Portion the dough into 1/2 cup portions (approximately 155-160g each) and roll into balls.
  8. Break each ball in half with your hands and press the two halves back together with the jagged, broken edges facing upward.
  9. Arrange 6 cookies on a heavy-duty cookie sheet and bake for 12-15 minutes until edges are golden and centers look matte.
  10. Allow the cookies to rest on the hot pan for 20 minutes to complete the carryover cooking process.

Notes

Precision is key for this recipe; always use a digital scale to measure your ingredients as even small variances in flour or butter can affect the cookie’s height. Ensure your butter is at exactly 65°F to maintain the air pockets necessary for the signature crumb, and never over-mix the dough once the flour is added to keep the texture tender.
