Description

These vibrant cookies blend the earthy umami of premium matcha with the rich, buttery sweetness of white chocolate. By utilizing browned butter and a dedicated hydration rest, this recipe achieves a superior chewy texture and a complex flavor profile that balances bitterness with creamy indulgence.

Ingredients

  • 1 cup unsalted butter
  • 2 1/4 cups all-purpose flour, plus 2 tablespoons
  • 2 tablespoons culinary grade matcha powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon vanilla extract
  • 1 1/2 cups white chocolate chips

Instructions

  1. Brown the unsalted butter in a light-colored saucepan over medium heat until golden and nutty, then transfer to a bowl to cool completely.
  2. Sift the flour, matcha powder, baking soda, and salt into a medium bowl to ensure a uniform texture.
  3. Whisk the cooled browned butter with granulated and light brown sugar, then incorporate the egg, egg yolk, and vanilla until the mixture is light and creamy.
  4. Gently fold the dry ingredients into the butter mixture using a spatula until just combined.
  5. Stir in the white chocolate chips until evenly distributed throughout the green dough.
  6. Cover and refrigerate the dough for at least 1 hour to allow for proper flour hydration and fat solidification.
  7. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop 3-tablespoon portions of dough onto the prepared sheets, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until the edges are firm but the centers remain slightly soft.
  10. Let the cookies rest on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

Notes

For the most vibrant green color, store your matcha powder in a cool, dark place as light exposure can cause the chlorophyll to fade. If your kitchen is particularly warm, consider chilling the dough balls for an extra 10 minutes after scooping to prevent excessive spreading during the bake. Using a light-colored baking sheet will help prevent the bottoms of the cookies from browning too quickly before the centers are set.
