Ingredients

  • 1 cup unsalted butter, cool room temperature (approx. 65°F)
  • 1 cup powdered sugar (confectioners’ sugar)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Extra powdered sugar for dusting and rolling


Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the cool butter and powdered sugar together for 2-3 minutes until smooth, avoiding incorporating excessive air.
  3. Add the egg and vanilla extract to the butter mixture and beat until fully combined and emulsified.
