Description

Ingredients

  • 333g salted butter, softened
  • 173g granulated sugar
  • 369g brown sugar
  • 2 eggs
  • 1 1/2 tbsp vanilla extract
  • 684g all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 400g Guittard milk chocolate chips


Instructions

  1. Preheat your oven to 375°F (190°C) and line large baking sheets with parchment paper.
  2. In a stand mixer fitted with a paddle attachment, cream together the softened salted butter, granulated sugar, and brown sugar on medium-high speed until the mixture is pale and well-aerated.
  3. Incorporate the eggs and vanilla extract, continuing to mix until the dough is fully emulsified and creamy.
  4. Add the all-purpose flour, baking soda, baking powder, and salt, then mix on low speed just until the flour is hydrated and no streaks remain.
  5. Gently fold in the milk chocolate chips until evenly distributed throughout the dense dough.
  6. Portion the dough into large 1/2 cup (approximately 140g) mounds and roll them into smooth balls.
  7. Break each ball in half and press the two halves back together with the jagged, broken edges facing upward to create the signature textured surface.
  8. Bake for 12 to 15 minutes, or until the edges are golden brown while the centers still appear slightly glossy and under-baked.
  9. Allow the cookies to cool on the hot baking sheet for at least 20 minutes to set their structure before moving them.

Notes

Using a digital scale to measure ingredients in grams is the most important factor in achieving the correct cookie density, as even a small variance in flour can lead to a dry crumb. To ensure the cookies don’t spread too much, make sure your butter is at a cool room temperature (65°F) rather than overly soft or melted.
